About Me

Hi! I'm Alice
I love to bake and cook and try new recipes and I adore throwing dinner parties (but hate cleaning up). I've written a couple of cookbooks about baking and I own far more cookbooks by other people than I should. I'm from New Zealand but am currently living in Brussels with my husband (who likes healthier recipes than I usually produce) and my 9 year-old daughter (who loves licking the bowl).

Finally got round to making a Christmas cake! Hat Finally got round to making a Christmas cake! Hat tip to @nigellalawson for the inspiration for the recipe. Came out at a stonking 100mm tall, about 3 kgs and eleventy million calories. It's a boiled fruit cake, so no aging required, which meant we could crack into it tonight, and man alive is it good! Even the 11 year old child liked it (dammit! More people I have to share with! 😆).

We may have moved halfway around the world and bac We may have moved halfway around the world and back, and they may have moved to the next town, but they're still my most favourite restaurant in, well, the whole world. Congratulations Elly and Paul on your superb new location and consistently delicious food (so good I forgot to take a photo of the main course - we were too busy diving in!). Best dish was sent from the kitchen by Paul for us to try - beef carpaccio. If you go to Pinocchio in Greytown (and you should) don't miss the beef carpaccio, or the parkvale mushrooms... or the beef cheek, or the chocolate fondant (you won't be disappointed by anything on the menu but these dishes are especially delicious). We've tried many a waffle across Belgium (in the name of scientific testing) and these are by far the best.... but best of all (probably to reward me for buying so many waffles they can now retire to a house by the sea) the lovely owners were kind enough to share the been-in-the-family-for-3-generations recipe with me! Round two proofed the cooked directly in my @lecre Round two proofed the cooked directly in my @lecreuset Dutch oven. 
By happy accident, the timer went off after the first 10 minutes while I was on the phone and I forgot about the bread till about the 20 minute mark... look at that ovenspring!!! So this loaf was proofed and retarted as per my previous post but cooked slightly differently....
Straight from fridge into very hot oven (250°c) with lid on for 20 minutes. I dribbled a little water (about 2 tbsp) down the sides between the baking paper and wall of the dutch oven before I put the lid on.
After first 20 minutes, lid off, temp down to about 225°c and another 12 or so minutes to brown it off.
Crust is much "crustier" than the first loaf (it's singing as it cools!) and a much better colour. 
I really do love this #lecreuset - it's awesome!

First #sourdough loaf proofed and baked in my new First #sourdough loaf proofed and baked in my new 20cm @lecreuset dutch oven (brought especially for sourdough!). I did the first proof with 3 coil folds (with 30 minutes between) in an oiled bowl, shaped the dough, popped it in the dutch oven, and did a final room temp proof (1 hour) before a 36 hour retard in the fridge (uncovered so the dough wouldn't sweat). Cooked directly from the fridge  in a screaming hot oven with the lid on, baked it at 250°c for 10 minutes, then reduced the temp to 220°c for another 10. Took the lid off and gave it another 20 minutes... the crust was a bit pale (but I was on a deadline for lunch between school zooms! 😆) so the next one will do an extra 5-10 minutes to give the crust a little more crunch and colour.

Love the ease of proofing the dough in the baking vessel... and the resulting perfectly round loaf 😍 very instagramable indeed 🤩

It's my birthday this week and, as every day is no It's my birthday this week and, as every day is now officially "blursday" when you're on day 46 (I think) of lockdown, I decided that every day this week should be my birthday and kicked off the celebrations by making this ridiculously decadent Peanut Butter and Caramel Slice with Salted Chocolate. 
Thick and gooey and rich and guaranteed to go straight to the hips, it's definitely not for the faint of heart or diet inclined but man-o-man is it good!

Even if you don't have anything to celebrate (other than maybe figuring out what day of the week it is), this is sure to bring a smile to your face.
